Lots of people made good suggestions, but this week's winner is Dave Groo who suggested New York-styled BBQ brisket pizza.* Here's how it went.
First, there's no way I was going to spend an entire Sunday smoking an entire brisket. I don't have a set up, and honestly, it seems like a pain in the ass. So I used this recipe from All Recipes.com. Super easy. Love it.

- Open tube of pizza crust.
- "Roll out" dough.
- Cook crust halfway.
- Layer BBQ sauce & cheese. (Did I mention I used smoked gouda? I'm a freakin' genius!)
- Add brisket.
- Finish cooking.
*Full disclosure. Brisket is almost always going to win.
